The ingredients are given for one 16x16x1.5cm frame.
Ingredients:
- 350g kiwi puree(no sugar added)
- 10g citrus or apple pectin
- 50g sugar(1)
- 250g sugar(2)
- 70g 43DE glucose syrup
- 3g citric citric acid, dissolved in 3g water
- Additional dextrose/sucrose and citric acid for coating
Instructions:
- Whisk together sugar(1) and pectin.
- Heat puree to 35-40C, whisk in pectin with the sugar.
- Bring to a simmer, whisk in sugar(2) and glucose syrup.
- Constantly stirring, cook to 75Brix(106C-108C).
- Take off the heat, quickly stir in citric acid solution.
- Pour into frame. Let stabilise for at least 8 hours.
- Cut and coat with dextrose/sugar.
