Kiwi Pate de Fruit

 


The ingredients are given for one 16x16x1.5cm frame.

Ingredients:

  • 350g kiwi puree(no sugar added)
  • 10g citrus or apple pectin
  • 50g sugar(1)
  • 250g sugar(2)
  • 70g 43DE glucose syrup
  • 3g citric citric acid, dissolved in 3g water
  • Additional dextrose/sucrose and citric acid for coating

Instructions:

  1. Whisk together sugar(1) and pectin.
  2. Heat puree to 35-40C, whisk in pectin with the sugar.
  3. Bring to a simmer, whisk in sugar(2) and glucose syrup.
  4. Constantly stirring, cook to 75Brix(106C-108C).
  5. Take off the heat, quickly stir in citric acid solution.
  6. Pour into frame. Let stabilise for at least 8 hours. 
  7. Cut and coat with dextrose/sugar.
